Our Shiitake mushrooms are naturally cultivated on coppiced Alder in a secluded ancient woodland on the edge of the Brecon Beacons, Wales. After harvested they are sliced and exposed to sunlight for at least 12hrs to enhance the Vitamin D content before being aired dried at low temperatures
